Carmen’s Crunchy Cookies




200g Pitted dates

1 medium ripe banana (110g)

2 Tbsp creamy peanut butter

1 teaspoon vanilla powder or few drops of vanilla essence

150g almonds

150 g quinoa flakes or oats

Pinch of salt

1 teaspoon baking powder

A splash of plant-based milk or water


Preheat oven to 200 degrees C.  Line a baking tray with non-stick paper.

To make the cookie dough:  In a food processor, add the nuts and quinoa flakes first and pulse until ground then add the rest of the ingredients and mix until creamy, scraping down the sides as needed.

Add the almond meal, quinoa flakes, salt, and baking powder.  Puree until combined.

Portion about 2 teaspoons of dough making a 3cm cookie.  Once you’ve portioned all of the cookies,  Gently push down the cookies to flatten. Bake the cookies for about 15 minutes. The cookies will be golden brown on the bottom when ready.

Remove and let cool 10 minutes before serving or storing.
